Quiche Lorraine

Ingredients

6 slices bacon

1 cup slices Swiss cheese, about 2 by 3 inches.

4 eggs

2 cups light cream

1 tablespoon flour

¼ teaspoon nutmeg

½ teaspoon salt

Freshly ground black pepper few grains cayenne pepper

1 unbaked 9 inch pie shell

Instructions

Preheat oven to 400. Fry bacon until crisp. Drain well and crumble it. Sprinkle into pie shell. Arrange cheese over the bacon. Combine eggs, cream, flour, nutmeg, salt, pepper and cayenne in a mix bowl and beat briskly with wire whisk or rotary beater for at least one min. Pour into pie shell. Bake on the lowest rack of the oven for 15 min. Reduce heat to 325 and bake about 30 min longer, or until a knife gently inserted into the center of the custard comes out clean. The pie will be slightly puffed and pretty golden brown. Serve cut in wedges like any pie.
